A rich and flavourful sweet prepared with whole wheat flour, pairs best with dal and baati.
CHURMA

Ingredients

1 cup whole wheat flour (atta)
½ cup semolina (rawa)
¼ cup ghee + for deep frying
½ cup milk
1 cup powdered sugar
½ tsp green cardamom powder
¼ cup chopped almonds
¼ cup chopped cashew nut
2 tbsps raisins (khishmish)

Method

1. Take whole wheat flour in a plate, add semolina and mix well. Add ghee and mix well. Add milk and knead to stiff dough. Divide this dough into small equal portions, shape each portion into an oblong.
2. Heat sufficient ghee in a kadai, slide in the oblong dough portions, deep fry on medium heat till golden brown and crisp. Drain on absorbent paper and set aside to cool to room temperature.
3. Crush the deep fried oblong portions and put them into a food processor jar and grind into a fine powder.
4. Transfer the mixture in a bowl, add powdered sugar, green cardamom powder, almonds, cashew nuts and raisins. Mix and transfer into a serving bowl.
5. Serve.
