120g egg white protein powder (1 1/2 cups)
1/2 tsp cream of tartar
1/2 tsp redmond real salt
1/4 cup allulose
1 1/2 cups of water
6g egg yolk powder (1 tablespoon) OR 20g whole egg powder (3 tablespoons)

Preheat the oven to 325 degrees. Gently whisk together the egg white protein powder, cream of tartar, salt and allulose in a stand mixer. Add in the water and whisk by hand to get all the powder up off the bottom of the bowl. Start the mixer with the whisk attachment on low speed. Gradually increase the speed until full. Mix on full speed for 5 minutes. Reduce speed to low, add in the egg yolk OR whole egg powder and mix just until combined and no lumps are left. Divide the batter into your greased pans. Bake in the preheated oven for 28 minutes (smaller buns may cook faster, larger buns may take longer so be sure to start checking at around the 25 minute mark). Remove the buns from the oven and allow to cool in the pans for about 10 minutes. Remove from pans and allow to rest on a wire rack until completely cool to the touch. Slice and enjoy.
