NOTE: I used chicken broth because it was what I had in the kitchen on this day. This is an option of a maqloubeh with a base of vegetables. If you are vegan or vegetarian use vegetable broth! (do I really need to tell you that though?)
Hello! I know it’s been a while. Here is how I make Maqloubeh- a delicious, healthy comfort food to be shared with family and friends. Maqloubeh traditionally is made with chicken or lamb, but today, I chose to make one using just vegetables.

Ingredients used:
1 eggplant
1 cauliflower
2 grey squash
1 can chickpeas
1 onion
Bunch of parsely
1 potato
2 tomatoes
1 cup basmati rice
plain yogurt
chicken stock (use veggie stock if you wish!)
pine nuts
pinch of saffron
