Potato leaf stew is a popular dish known to West Africans and enjoyed by my friends from Sierra Leone and Liberians. It is typically served with rice and it is very delicious with the secret ingredient being ogeri. Enjoy!!


8 cups chopped fresh potato leaves
1 and 1/2 pound bone in beef
2 cups chopped onions
1 tablespoon himalayan salt
1 teaspoon crushed black pepper
1 shrimp stock cube
1 teaspoon finely chopped garlic
1 tablespoon grated ginger
1 tablespoon chopped Fresno peppers
3 tablespoons of water
3 tablespoons shrimp powder
1/4 cup palm oil
2 heaping tablespoons full of ogeri
1 sliced medium red onion added in the end (optional)
3 habanero peppers (optional)
