This Cameroonian Fish Stew and rice are a match made in heaven! This is a great recipe for weeknight dinners or for the weekends. Add some sweet fried plantains on the side and you’ll be in heaven!

I grew up eating different kinds of tomato stew with rice. There are various versions made with beef, chicken or fish. You’ll love this African Fish Stew! I used a kind of fish I get from the Asian market called “round scad”. But you could use mackerel or any other fish you have on hand. Hope you enjoy this Fish Stew Recipe!

Ingredients Needed for Fish Stew
2 medium whole firm fish
8 medium roma tomatoes (extra ripe)
1 medium onion – chopped
7 garlic cloves
1 inch ginger root (peeled)
3-4 sprigs basil
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1 cup neutral tasting oil (like vegetable oil, canola or corn oil)
3 Maggi cubes
1 habanero pepper (optional)
