Preheat oven to 350 degrees
1 Cup Almond Flour
¼ Cup Sugar Replacement (erythritol, swerve, sweet luv)
½ teaspoon baking powder
1/3 cup finely shredded coconut flakes
20 grinds of vanilla bean
Pinch of salt
2 large eggs
5 drops of a vanilla stevia (optional)
¾ tablespoon vanilla extract
¼ cup coconut oil
1 tablespoon coconut manna
Combine all dry ingredients with except coconut flakes in one bowl (mix)
Combine eggs, vanilla extract and vanilla stevia in a separate bowl (mix)
Melt coconut oil and manna together
Add dry and wet bowl together mix thoroughly
Then add oil/manna mixture and coconut flakes
Makes 20 servings of ½ tablespoon size cookies
Bake at 350 degrees for 9-12 minutes (check for doneness at 9 minutes and add a minute until cooked)
80 calories per cookie with 7.5 grams fat, .7 net carbs and 2.4 grams of protein
