Pumpkin Cupcakes
Cake
1 1/2 C granulated sugar
1 7/8 C all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/8 tsp ground cloves
1/2 tsp cinnamon
2 lrg eggs
8 oz pumpkin puree
1/2 C Mayonnaise
1/2 C water
Preheat oven to 350
Mix the dry ingredients together
mix the wet ingredients together
pour the wet ingredients into the dry ingredients and mix until smooth and combined
Fill cupcake liners about 2/3rds full
bake 17-19 mins, until tester comes out clean
Let Cool
Frosting
8 ounces full fat cream cheese softened
4 Tbsp butter softened
3-4 C powdered sugar
1 tsp vanilla
Beat the cream cheese, butter and vanilla until smooth
add the powdered sugar and mix, scraping the sides, until smooth and just the right thickness (more of less powdered sugar to get the right texture)
Pull about 1/2 C aside and dye green
dye the rest orange
pipe pumpkin onto the top with a large round tip
add small green stems, and vines and leaves

Pumpkin Spice Rice Krispy treats
1/3 C butter
1/3 C pumpkin puree
20 oz marshmallows (2 C set aside)
½ tsp cinnamon
¼ tsp nutmeg
1/8 tsp cloves
1/8 tsp salt
7 C rice cereal
In a saucepan melt the butter
Add the pumpkin puree and cook until warmed through
Add most of the marshmallows (not the 2 C set aside)
stir until the marshmallows are mostly melted
take off the heat and stir in the spices
add the final marshmallows and stir together
prepare a bowl with non stick spray, add the cereal and marshmallow mixture and stir until coated
prepare a 9×13 pan with non stick spray and add the mixture – press down with your hands or spatula (I like to spray with more non stick spray)
let cool then cut and serve

Marshmallow slime popcorn
7-9 C popped popcorn
1/2 C packed light brown sugar
1/3 C butter
16 oz mini marshmallows
green dye
candy eyeballs
Place popcorn in a large bowl. If you like it gooey, use less popcorn. less gooey more (7-9 C is my favorite.)
In a saucepan melt butter and brown sugar
Add the marshmallows.
Stir until melted and smooth.
take off the heat and stir in green dye.
Pour mixture over popcorn and stir. Sprinkle in the candy eyeballs.
serve and enjoy
