4 cups = 800g (28.2 oz) fresh strawberries
2x Brownies: 0:28
280g (9.8 oz) dark chocolate
160g (5.6 oz) butter
320g (11.3 oz) granulated sugar
40g (1.4 oz) unsweetened cocoa powder
80g (2.8 oz) ground almonds
1/2 tsp salt
Cheese Cream for 2 cakes: 2:58
600g (21 oz) white chocolate
400g (14 oz) whipp. cream
400g (14 oz) mascarpone
400g (14 oz) soft cheese
Chocolate Mirror Glaze: 7:16
100g = 1/2 cup (3.5 oz) sweetened condensed milk
175g (6 oz) semisweet chocolate
150g (5 oz) granulated sugar
25g (0.8 oz) unsweetened cocoa powder
100ml (3.5fl oz) water
10g (0.3 oz) gelatin powder
50ml (1.75fl oz) cold water
To decorate strawberries: 3:54
use Chocolate writing icing
To decorate cake:
strawberries, cheese cream, chocolate bars, stars
1. Two Brownies 0:28
Preheat oven to 180°C (350°F) Gas 4. Line two round cake tins with baking paper, one 22 cm (8.6 inch) and one 18.5 cm (7 inch). Add the chocolate and butter to a heatproof bowl and place over
a pan with simmering water, stir until melted. Whisk the eggs and sugar into a high and fluffy foam. Pour the lukewarm chocolate into the egg mixture and whisk (ensure the chocolate is not hot otherwise the eggs might shrink). Finally, mix the cocoa powder ground almonds and salt manually. Pour the mixture into the cake tins and bake for about 20 minutes. Let the brownies cool and then take them out from the tins.
When the brownies are hot, they look like half-baked. They
contain a large amount of butter and chocolate which will solidify after cooling down. The correctly baked brownies have a cracs on the top.
2. Cheese Cream 2:58
Cut the chocolate into small pieces and melt it in the bain-marie.
Mix the whipp. cream, mascarpone and soft cheese together until you get a semi-solid mixture. Pour into lukewarm chocolate and whisk. Let the cream cool down.
The chocolate must be lukewarm and not hot before mixed with other ingredients.
3. Two Layers Cake 4:01
Overturn the cooled down brownies and put them on the bottom
of the high-cake tins. Wash the strawberries and cut them in half lengthwise. Place them close together with the cutting edge against the cake tin side ( spike upwards) all the way around the cake tin. Spread some of the cheese cream over the strawberries and cover the centre of the brownie as well. Save some strawberries for decoration and cut the rest into a small pieces. Put the chopped strawberries in the middle of the cake and cover them with the remaining cheese cream.
Keep the cake in the refrigerator for at least 4 hours.
Follow the some instructions for the second brownie. After 4 hours
remove the cake tins from the cakes carefully.
Lay the smaller cake on the top of the larger one and pour the chocolate mirror glaze on the top. After 10 minutes you can start to decorate the cake.
4. Chocolate Mirror Glaze 7:16
In a small bowl place the gelatin and cold water and let it swell for 5-10 min. Place the chocolate in the bowl and set aside. Place the water, sugar, condensed milk and cocoa powder in a saucepan. Bring it just to a boil and remove from the heat. Stir in bloomed gelatin until it is dissolved. Pour hot cocoa mixture over chocolate. Let it sit for about 5 min. until the chocolate is melted. Use an immersion blender and blend until smooth. Sieve the glaze and let it cool (32°C-35°C) before pouring over the frozen cake.
5. Strawberries decoration
Decorate with Chocolate writing icing or melted chocolate
6. Cake decoration
Decorate with cheese cream, strawberries, chocolate bars, stars
or according to your ideas.
