Air Fryer Kitchen Sink Cookie (Bob’s Red Mill sponsored)

I love my air fryer. And I love cookies. (Check out my Amazon Influencer page to see which air fryers I have.) I’ve thrown lots of flavors and textures, courtesy of Bob’s Red Mill, into this mouthwatering cookie – ‘everything but the kitchen sink’ style! Enjoy!

C29/F8 (for half the cookie), or C57/F16 for the whole thing!

2 tsp raisins
hot water
1 unopened container Bob’s Red Mill
plain instant oatmeal with flax and chia
1 tsp Bob’s Red Mill egg replacer
2 tsp water
1/2 small RIPE banana
2 tsp Bob’s Red Mill date sugar
splash of vanilla
1 tsp cinnamon
pinch Bob’s Red Mill baking soda
pinch salt
1 Tbsp chopped pecans
1 Tbsp non dairy chocolate chunks
1/2 Tbsp Bob’s Red Mill coconut flakes
coarse or flaked sea salt

Preheat air fryer to 360 for 10 minutes.
Soak raisins in a tiny bowl, just covered in hot water, about 5 minutes to plump.
Add raisins and hot water to the oatmeal cup and stir. (It should not reach the line on the cup)
In another small bowl, stir together 1 tsp egg replacer with 2 tsp water. Sit for 1 minute.
In a Ziploc bag, squeeze banana to mash, then add to the oatmeal cup.
Stir in egg replacer, date sugar, vanilla, cinnamon, baking soda and salt.
Spread mixture in a sprayed air fryer baking pan and top with pecans and chocolate chunks.
Reduce heat and air fry at 310 for 5-7 minutes.
Remove and top with coconut flakes and sprinkle with coarse salt, if desired.
Allow to cool slightly, then transfer to a plate.
