Who doesn’t love baked mac & cheese? This low carb alternative will satisfy all your mac & cheese cravings!
1 head cauliflower cut into bite-sized florets
2 cups heavy cream
2 tbsp butter
3 cups shredded cheese (cheddar or your favorite cheese)
4 ounces cream cheese
½ tsp Creole Seasoning
½ cup bacon bits
½ cup pork rind panko (ground pork rinds)
Salt & Pepper to taste

Preheat oven to 350 degrees

Place bite-sized cauliflower florets in a pot, cover with water and boil until fork tender
When finished, drain well and place cauliflower in a large mixing bowl

In a saucepan, over medium heat, warm heavy cream and butter until melted
Slowly add shredded cheese and cream cheese, continue cooking until all melted
When mixture is smooth, add creole seasoning and salt & pepper and stir to incorporate

Pour cheese mixture over cauliflower florets and mix well

Pour the full mixture into a baking dish
Sprinkle pork rind panko and bacon bits over the top of the dish
Bake at 350 degrees for 20 – 30 minutes
