BEEF MECHADO

2 tablespoons minced garlic
1 medium onion, sliced
4-5 pieces tomatoes (remove seeds, and sliced)
4-5 pieces medium red bell peppers (remove the seeds, and sliced)
1 kilo beef cubes (Brisket/ Oyster blade/ Shank)
1 teaspoon cracked black pepper
3-4 pieces bay leaves
1 cup tomato sauce/ crushed tomatoes
½ cup red wine (optional)
¼ cup soy sauce
2 tablespoons white vinegar
1 tablespoon Worcestershire sauce
3 cups water OR stock (chicken or beef)
2 tablespoon tomato paste
1-2 tablespoons white sugar
½ kilo potatoes, sliced

Salt and pepper, to taste

Notes:

– Slow cook over lowest flame for at least 2 hours

– If using a pressure cooker, cook for 1 hour over low flame
