A cake without flour and of course gluten-free, which makes it a different healthy and delicious dessert, do not miss this recipe.
500gr of cassava or raw grated manioc
3 eggs
100gr of grated coconut and a little more to place on top before taking to the oven
325gr of sugar (1 and a half cups)
100ml of coconut milk
1/2 cup of milk
2 teaspoons baking powder (Royal powder)
50gr of butter (2 tablespoons)
1 pinch of salt
1 little glass sugar (powder) to decorate after leaving the oven
1 mold preferably 24ctm diameter with fireplace oiled and floured with cassava flour preferably.
We turn the oven to a temperature of 180ºc so that it heats up.
In a blender we place the yucca, the eggs, the milk, the coconut milk and the butter, we liquefy until making a cream.
Add the sugar, salt and baking powder and liquefy a little more.
Place the mixture in a bowl and add the grated coconut, with a wooden spoon we mix well so that all the ingredients are integrated.
Place the mixture in the mold and take to the oven to bake at 180ºc between 35 to 45 minutes or until chopped with a stick it comes out dry.
Remove from oven let cool, unmold and sprinkle with icing sugar, is ready, enjoy.
