So as the colder months approach, i thought i’d cook up something a bit more comforting. My chicken and tarragon pie. I’ve enlisted the help of my best buddy James, who’s staying with me for a week or 2.

Now the beauty of this pie is not only is it easy to do, but it tastes bloomin great too! Tarragon is a really great herb for chicken. It has a mild aniseed flavour that just works with chicken really well. It’s also great with fish and pork. Now, I really wouldn’t count the calories with this one, because there’s so much going on in this there’s just no point haha.

To make my chicken and tarragon pie you will need:
►6 chicken thighs
►4 rashers of smoked streaky bacon
►4-5 tbsp of double cream (heavy cream)
►2 medium carrots
►2 medium onions
►2 bay leaves
►2 tsp of English mustard
►1-2 tsp of tarragon
►A good handful of grated cheddar
►About 500ml of chicken stock
►About 900g of mashed potato
►A good knob of butter
►2 + 1/2 tbsp of plain flour
►Olive oil
►Salt & pepper
►Extra butter for the top
