This is a simple way to make a crock pot cinnamon sugar candied cashew. This recipe is also good with pecans.
1 cup sugar
1/2 cup brown sugar
1 tablespoon cinnamon
1 teaspoon cloves
2 egg whites
1 teaspoon vanilla
6 cups of cashews
In medium bowl whisk together sugars, cinnamon, and cloves.
In another bowl combine egg whites and vanilla. Whisk until frothy.
In greased slow cooker add cashews and egg white mixture. Mix until evenly coated.
Then pour sugar mixture over cashews and stir to coat as evenly as possible.
Cook on low for 3 hours stirring every half hour. After cashews are done cooking,
spread cashews in single layer on a baking sheet to dry/harden.
* if sugar is not dissolving add tablespoon of water while cooking.
