A slice of deliciousness!! Coconut cream pie is the perfect ending to the best summertime meal. One of my favorite desserts! A super easy recipe! You can just use a ready made pie crust & make the filling for less than 10 minutes.

**** DELICIOUS COCONUT CCREAM PIE RECIPE****
Pie filling:
1 & 1/2 cup half & half ( substitute : evaporated milk, whole milk)
1 can (13.5 oz ) coconut milk
2 eggs plus 1 egg yolk beaten
3/4 cup granulated sugar
1/4 cup salt
1 & 1/2 cup sweetened coconut flakes
1 tsp coconut extract (substitute: Vanilla extract)
Toasted Coconut:
1 cup sweetened coconut flakes
bake in 325 F preheated oven for 3 mins
or toast it the stove until golden brown
Cream topping:
16 oz heavy whipping cream
2 Tbsp powdered sugar
1 tsp vanilla extract
**** BUTTERY FLAKEY PIE CRUST RECIPE ***
2 & 1/2 cup all-purpose flour
1 cup cold cut unsalted butter
1/4 cup sugar
1/4 tsp salt
4-5 Tbsp cold water
