INGREDIENTS

Arayes
1/2 cup extra-virgin olive oil
1 yellow onion, chopped
1 carrot, finely chopped
1 1/2 teaspoons tomato paste
3 garlic cloves, finely chopped
1 red bell pepper, chopped
1 1/2 pounds mushrooms (button, baby bella, oyster, any kind works), finely chopped
1/2 cup walnut halves, roughly chopped
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon red pepper flakes
1/4 teaspoon ground cayenne
Kosher salt and freshly ground black pepper
1/4 cup cornstarch
1/3 cup water
1 handful chopped fresh cilantro or parsley leaves
6 to 8 pitas with pockets, halved

Tahini sauce
1/2 cup tahini
2 tablespoons fresh lemon juice, plus more to taste
1 to 2 garlic cloves, finely chopped
3 tablespoons water, plus more if needed
1 pinch of kosher salt
