I’m making a crockpot chicken recipe topped with cheese and croutons (yum!), easy low-carb/keto coconut shrimp that can be prepared in the air fryer or oven, and a microwave strawberry shortcake mug cake that cooks in less than 90 seconds!

Crockpot Chicken Divan:
*I halved this recipe. I didn’t have curry powder so I used ground mustard, cumin, cayenne and ground ginger. I also topped it with shredded cheddar and croutons!

Baked Keto Coconut Shrimp:
*This can also be made in the air fryer. In the air fryer, I baked these at 370 for 5 minutes, then at 330 for 4 minutes.
