Gajar Matar Ki Sabzi
Preparation time 10 minutes
Cooking time 15 minutes

Course Main

For Paste
1 medium onion, roughly cut, प्याज
1 tomato, roughly cut, टमाटर
1 inches ginger, peeled & chopped, अदरक
2 Green Chillies, हरी मिर्च
¼ cup water

For Sabzi
2 tbsp ghee, घी
1 tsp cumin Seeds, जीरा
Prepared paste
¼ tsp turmeric powder,हल्दी पाउडर
1 tsp coriander powder, धनिया पाउडर
½ tsp degi mirch powder,देगी लाल मिर्च पाउडर
¼ tsp asafoetida,,हींग
Salt to taste, नमक स्वादअनुसार
3 winter carrots, peeled & cut into small cubes, गाजर
1 cup tender green peas, हरी मटर
1 wedge of lime, नींबू का रस
2 tbsp fresh coriander leaves, chopped, धनिया
1 tsp ghee, घी

For paste
● In a pan, add onion, tomatoes, ginger, green chillies and water. Blend into a smooth paste.

For sabji
● In a kadai, add ghee and add cardamom, cumin. Let splutter.
● Now add the prepared paste and sauté for 4- 5 minutes until its raw aroma leaves.
● Now add turmeric powder, coriander powder, degi mirch powder and sauté well for 2-3 minutes more on low flame.
● Add asafoetida, adjust salt and mix well.
● Add chopped winter carrots, green peas, mix well and let it cook on low flame until vegetables are cooked.
● Give a final touch with a spoonful of ghee for better taste.
● Garnish with coriander leaves, and sprinkle lime juice. Serve hot with roti.
