This carrot cake sheet cake is made in one bowl & is incredibly moist! One batch makes a thick 9×13″ sheet cake that’s topped with cream cheese frosting.

I chose not to include any mix-ins like raisins or nuts, but you can fold in 1/2 cup of raisins or 1 cut of chopped walnuts with the carrots if you want!
