The Katsudon is one of Japan’s favorite rice bowls (donburi), consisting of a pork cutlet with umami filled eggs on top of rice. Due to it’s easy preparation, delicious taste, and low cost, it’s a staple meal for busy professionals. The katsudon recipe:

Dashi Broth Ingredients:
500ml water
10g kombu (seaweed)
13g katsuobushi

Sauce Ingredients:
75ml dashi broth
2 tbsp soy sauce
1 tbsp sugar
1 tbsp mirin
1/4 onions
2 eggs

Pork Cutlet Ingredients:
Slab of pork loin/porkloin/shoulder
Assorted flour and breadcrumbs/panko (enough to cover meat)
1 egg
1 tsp oil
