In today’s video we will show you how to make Mediterranean salad bowls with the most delicious roasted red pepper hummus from scratch! This is pretty much what all of our lunches look like, this is a super well balanced meal that is full of nutrients! This is another really versatile recipe so if you did not like any of the ingredients, they could easily be subbed out for something that you did like! This would be a great thing to meal prep throughout the week, honestly I make this hummus weekly to eat on for snacks and lunches etc. We hope you guys try this one out and enjoy 🙂 xx

Comment of the day: What is your favorite kind of hummus?

Chicken Spices:
1 tsp dried parsley
½ tsp cumin
Salt to taste
1 dash of cinnamon (I just do one “shake” of the cinnamon spice container)

Roasted Red Pepper Hummus
1 roasted red pepper
1 can of drained and rinsed chickpeas
2 heaped tbsp all natural tahini
1 tsp cumin
1 tsp salt
2 cloves of garlic
Juice of 1 lemon
2-3 tbsp avocado or olive oil

Quinoa:
1 part quinoa to two parts water

Salad Fixings:
Handful of spinach
Green cabbage
English cucumber
Tomato
Avocado
Black olives

Dressing:
Lemon juice with a pinch of salt
