A well known dish in Afghanistan is Sabzi (spinach) in combination with challow (rice). I used fresh spinach, onions, garlic and pepper. Watch this video and I’ll teach you how to cook this easy dish. Best part maybe, it’s completely vegan.

Ingredients:

2 kg fresh spinach
100 ml sunflower oil
200 gr onions in cubes
100 gr spring onion slices
30 gr green pepper slices
10 gr garlic finely chopped
10 gr salt
10 gr black pepper powder

Method:

In a large pan, sauté the chopped onions in the sunflower oil for about 10 minutes, until golden brown
Add the garlic and fry for 1 minute
Add the chopped green pepper and fry for 2 minutes
Now you can add the spinach in batches and fry until reduce volume
Add the spring onions and fry for 1 minute
Cover the pan with a lid and cook on medium flame 20 minutes
Stir well in between
Remove the lid and stir well and reduce flame

Serve with rice and salad
