In Cold Winter Days what do we need more then “Comfort Food” so Today I am sharing with you one of my favorite Ultimate Comfort Food Recipes my Lentil soup with vegetables it’s a very healthy and filling meal my family & I love and i am pretty sure you will love it too .
An incredibly easy recipe to make Lentils are very easy to cook, taking only taking around 20 to 30 minutes to prepare if they are not split , even less time if pre soak them .
not topre mention how good lentils are for our health below are a few of the benefits I love about lentil soups ,
1)a rich source of fiber and B vitamins.
2) a very good replacement for meat proteins.
3) lentils are also known to reduce cholesterol.
4) plus decrease blood sugar levels.
5) good for increasing healthy gut bacteria.
Ingredients for lentil soup
2 cups of whole lentils with skin (soaked for 15 to 20 minutes)
1 carrot shredded
1/2 cup sliced cabbage
4 celery sticks sliced
6 garlic cloves smashed or minced
2 tomatoes diced
1/4 tsp turmeric
1/2 tsp salt
3 to 4 tbsp evoo
1 tsp Red Pepper Flakes
6 to 10 cups of boiling water
Dry or fresh Parsley for garnish (Optional)
For the topping
Sliced Ginger
Sliced Green Chilli
1/2 cup sliced green onion
2 tbsp oil
1/2 tsp Red Pepper flakes
Best Served with Whole Wheat Sliced Bread
