How to get soft rice… watch the video..

A tangy lemon paneer rice is a tasty lunch and it goes well with coconut thuvaiyal. Recipes are included below.

100g Paneer
2 tsp coconut oil
1/2 tsp mustard seed
A pinch asafoetida
2 green chilli cut vertically
1/2 lemon juice
1/2 tsp turmeric powder
Curry leaves

Grate or crumble the paneer and keep it aside.

Heat oil in a small wide pan and add mustard seed and asafoetida.

Add green chill and curry leaves , sauté.

Mix lemon juice and turmeric powder, add in the pan, add little salt along, switch off the flame.
Add paneer into the pan and mix carefully. It looks like sticking together, actually won’t.

When getting the temperature down, it separates.

It can be served with coconut thuvaiyal.

Coconut thuvaiyal :

2-3 Tbsp scrapped coconut
4-5 red chillies ( I use the ones that is not too spicy)
1 pinch of kokum (kudam puli)
( soaked in a Tbsp of hot water for 10 mins)
A pinch of asafoetida


Combine all the ingredients in a blender, blend coarsely.
