Hello there. I hope this finds you well. These Maandazi Cream Pastries may be similar to cream puffs or macaroons, but they are slightly different; these are slightly denser and not too sugary, yet they are packed with so much flavour they’ll slap your taste buds silly 😋.

This Maandazi cream pastry is a recipe which, to be honest was borne from an experiment I did; and out of trial and error, it turned out to be really delicious. I did my research and I haven’t seen any record of this Maandazi cream pastry recipe anywhere; whether in cook books or the Internet. But after several attempts, I tried the cream pastries and they were extremely delicious.

The measurements below can feed 5 or more people.
In order to make this delicious Maandazi cream pastries, you will need the following:

FOR THE CREAM CUSTARD
You will need the following ingredients…
-a glass of milk
-1 tablespoon of vanilla essence or vanilla bean
-2 egg yolks
-3 tablespoons of sugar
-2 tablespoons of corn starch
-the food color of your choice (green, blue, red, yellow etc)

You can however use store-bought jam if your culinary skills aren’t too refined and you have difficulties making the cream custard from scratch.

FOR THE MAANDAZI PASTRIES:
You will need the following ingredients…
-About 4 cups of all purpose flour
-2 tablespoons of baking powder
-2 egg whites
-2 tablespoons of margarine or butter
-2 tablespoons of cardamom powder
-a cup of milk
-5 – 6 tablespoons of sugar
-about a quarter cup of vegetable oil
-a tablespoon of salt
