Vegan pumpkin mac & cheese that is starch solution compliant for weight loss is perfect for the fall. it is pumpkin season after all. This recipe is gluten free, nut free, wfpb, oil free and so easy and delicious. Here is what you will need for this vegan pumpkin mac & cheese starch solution recipe for weight loss:

***Ingredients***
one pound of gluten free pasta (I used chickpea pasta)
1/2 onion
1 clove garlic
1 carrot chopped
1 sweet potato chopped
1 cup pumpkin puree
2 tsp. mustard
1/2 tsp smoked paprika
2 T nutritional yeast
large handful of baby spinach chopped
1/2 t0 3/4 cup potato cooking water, reserve water after veggies are cooked
potato flakes
salt and pepper to taste

cook pasta according to package directions,
in another pan boil carrot and sweet potato and onion till soft, scoop out potatoes, carrots and onion add garlic, spices and nutritional yeast, pumpkin, and cooking water and put into vita mix or high speed blender and blend till smooth. Drain pasta and put back into pot
pour cheese mixture into pasta and add baby spinach, stir well, pour into 8 or 9 inch square baking dish and sprinkle with potato flakes
Bake in a preheated over at 400 degrees for 20 to 25 minutes until golden brown and bubbly.
