Copy Cat Cracker Barrel Meat Loaf *Submitted by Deniece*
2lbs ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper(color doesn’t matter)
1 1/2 sleeves crushed Ritz crackers
4 oz. shredded Colby Jack cheese
1/2 cup milk
1 tsp salt
1/4 tsp black pepper
1/2 to 3/4 cup ketchup
2 tbsp brown sugar
1 tsp mustard
Preheat oven to 350. In large bowl, mix eggs, crackers, onion, bell pepper, cheese, milk, salt and pepper. Add ground beef and mix to combine, don’t over mix. Place meatloaf on parchment paper or foil lined baking sheet. Form into loaf. Bake for 30 min. Remove from oven, spread topping over meatloaf and bake an additional 30-40 min until 160 degrees inside.
4 slices of bacon, chopped into bite-sized pieces
2 cans green beans, drained
1.5 – 2 cups chicken stock
1 tsp garlic powder
1 tbsp brown sugar
salt and pepper to taste
Cook bacon in same pot you plan to cook green beans. After the bacon is done, do not drain the grease! Pour in green beans, chicken stock and seasonings. Bring to a boil and then reduce heat to simmer for about 30 minutes (uncovered) until most of the liquid evaporates.
Cube red potatoes, leaving skin on. Heat large skillet to med-hi and add a couple tbsp Olive Oil and 1-2 tbsp butter. Allow to heat completely and add your potatoes. Season with whatever you’d like to use. (We use salt and pepper, garlic powder, paprika and Everything seasoning from Flavor God.) Cook for 15 minutes, or until fork tender. Be sure to stir frequently to keep them from burning on one side.
