Tofu Tikka Masala

-1/4 cup veggie broth
-3/4-1 full pack of tofu, frozen and then defrosted
-1 15 oz can of tomato sauce
-1 cup of cashew cream( 1 cup cashews blended with 1/2 cup of broth or water)
-1/2 cup vegetable broth
-1 tbsp garam masala spice mix
~1 tbsp garlic
-1 tsp ginger
-2 tsp curry powder
-1/4 tsp cayenne pepper(optional)

1. Over medium high heat, add broth
2. Add garlic and cook until fragrant
3. Add your tofu and mix everything around
4. Add broth, tomato sauce, and cashew cream
5. Add all of your seasonings
6. Reduce heat to a low, and let simmer for 20-35 minutes
7. Serve over rice of choice and enjoy!

Spicy Noodles

-Two blocks of ramen noodles
-1 pack of trader joes vegan beef( can also use different vegan beef, tofu, or chickpeas)
-1/3 cup vegetable broth
-3 tbsp soy sauce
-1-2 tbsp minced garlic
-2 tsp brown sugar
-Spices to taste(optional: I like onion powder, ginger)
-2 tsp red pepper flakes(cut this back if you want less spice-it is quite spicy. )
-1 cup frozen vegetables(I use a mix of peas, carrots, and corn)
-Top with green onions

1. Boil your ramen noodles. Drain and set aside
2. In a bowl, whisk together the broth, soy sauce, garlic, brown sugar, and red pepper flakes until well combined. This will be your sauce.
3. Heat your saucepan to medium high. Add the vegetables and cook for about five minutes
4. Add the beef, noodles, and sauce and cook for about 10 more minutes.

Asian-Inspired Meatballs
For the meatballs
-1 pack of vegan ground beef (I have done this with Impossible and Beyond)
-1 flax egg(1 tbsp flax + 2 tbsp water)
-1/3 cup of panic breadcrumbs
-1 tbsp of gochujang
-2 tsp of soy sauce
-1 tbsp of garlic
-4-8 springs of green onion, chopped
For the glaze
-1/3 cup brown sugar
-2-3 tbsp soy sauce
-1 tbsp corn starch
-1/2 cup veggie broth
-1 tsp rice wine vinegar

For the meatballs:
*Preheat the oven to 375 degrees*
1.Combine all ingredients in a bowl and mix
2.Roll into balls
3.Place the meatballs on a baking sheet
4.Put the meatballs in the oven and bake them for 20 minutes or until golden brown
For the glaze:
1. In a still sauce pan, whisk together all of your ingredients
2. Over medium heat, bring to a simmer
3. Let simmer until it has a thick, glaze-like consistency.
*Put glaze on your meatballs, serve over rice or noodles, and enjoy!*
